Oh boy, this is my first time making anything with “double meat”. It was unheard of in my growing up years…and I don’t blame my parents one bit. I mean, it’s sort of “gluttony”, right? The chance to eat two meats in one meal?
I have to let you know, I am also not a meat lover. I prefer a vegan/vegetarian diet, but this was for the hubby. And it was a way to get a bunch of greens in.
Kathy’s Kale Brussels Bacon Sausage Dish
1 container (or about 1 lb) of fresh brussel sprouts (pre-shredded is best, if not, cut them up or shred in your food processor)
6 slices cooked bacon chopped or diced
1 large bunch of kale
2 small sausage links or 1 large one (any kind will do)
1 chopped onion
Tear your kale off the stems and then chop coarsely. Put into a bowl and drizzle olive oil and salt over it. Massage the oil and salt in and let sit for about 20 min. This realllllly works to break down tough kale leaves because there’s nothing worse than tough kale. Heat olive oil in a pan and sauté your kale, brussels sprouts and onions for about 6-7 min or until it starts getting soft, not too soft. Then, add your bacon, sausage and cook over med-low heat for about 5 minutes. Season with salt and pepper if needed.
Easy to make, great for paleo or gluten free diets!
