Ok do this next time you get Chinese food. I know you are like us; you eat all the good stuff and have leftover cartons of white or brown rice…I know you do! 😉
Make healthy fried rice!
I used white rice, but brown is preferable.
finely chop some garlic cloves
finely chop 2-3 different veggies of your choice or whatever you have. I used a handful of kale leaves, a large carrot, a celery stalk, a couple broccoli florets and a small onion. Saute the veggies in olive oil until slightly softened. If you have a big pan, push the veggies to one side of the pan and add some more oil to the blank side. Then add the rice into the oil part until coated. Then mix it all together, heating until desired softness of the veggies and until the rice is heated through. Season with salt and pepper or some organic soy sauce.
Voila! You can even top with some grilled chicken or shrimp for a complete meal. Anyone hungry yet? 😉
