Day 344 – bars…

I don’t “do” exact very well. What started out as a search for a banana muffin recipe, turned out to be some really good, but thin granola bars. ๐Ÿ™‚
Check out what I concocted below. I’m hoping they will be a good breakfast on the go for this coming week which will be a busy one! And by the way, these bars could totally be sugar free.

Banana and Dried Fruit Oat Bars

1 egg
3/4 c applesauce
2 tb coconut sugar (optional)
3 c oats
1/4 c slivered almonds
2 tb dried cranberries
2 tb chopped dried apricots
2 tb chopped dates
1 ripe banana mashed
1/2 ts ground ginger
1/2 ts vanilla
1/2 ts cinnamon

Mix all ingredients together and spread in a 9×9 pan. Bake at 325 for about 20 minutes, although I am not sure if it was quite long enough since my bars are a little floppy and not crunchy.
