Um…not the prettiest recipe ever considering it was supposed to be a lovely carrot and apple salad. However, my Cuisinart pulverized my ingredients! I thought about it for a second, then decided I could easily turn it into a great new recipe for Thanksgiving: a Carrot Apple Cranberry Relish! And it ain’t your mama’s sugary cranberry mold! This puppy is loaded with vitamins and nutrients from the carrots, grapes and apples.
5-6 small purple and/or regular carrots
2 small apples
dried cranberries
pecans
grapes
fresh lemon juice
Finely chop the carrots and apples in your food processor and turn out into a bowl. Add diced or halved grapes, a handful of your favorite nuts (chopped is best) and a handful of dried cranberries. Squeeze about half of a fresh lemon in it to preserve your apples and mix up.
You can add a tiny bit of sugar if your apple isn’t sweet enough and you might also play around with some nice warming spices for depth of flavor like cinnamon or ginger.
