This may not be an autumn post today, but it’s my favorite sandwich and I needed my version of comfort food this afternoon. I call this the “sunshine crunch” sammie.
One lovely hunk of sourdough bread, a thin layer of vegannaise or mayo for non-vegans, a heaping pile of alfalfa sprouts, a thinly sliced avocado and a handful of nuts. Today I used pecans, but I prefer salted, raw cashews.
Hands down, my favorite go-to sandwich.
