I hope you’re enjoying lovely fall weather where you are. I had a similar salad this summer; Grilled Romaine Salad and I knew I’d have to try my hand at it before the weather turned. Grilled lettuce, you say? Yes, it is really a neat flavor! I can’t explain but it is so good.
Wash and prepare your romaine lettuce hearts by cutting them neatly in half (length wise) so the leaves stay nice and tight. Grill on each side for no more than 2 minutes.
This salad is best eaten right when it comes off the grill, so get the rest of the salad made ahead of time and throw the lettuce on at the last minute.
Grilled Romaine Salad
3 romaine hearts cut in half lengthwise and grill for 2 minutes each side.
cut up vegetables of your choice: I used a cucumber, a large carrot and a couple tomatoes
1/2 cup toasted slivered almonds (toast on a baking sheet for a couple minutes until brown)
optional – 1/2 c crumbled blue cheese
Toss with blue cheese vinaigrette or a hearty Caesar type dressing.
