There must be something in the water here because my husband just made dinner! (He’s my guest blogger and he doesn’t even know it, haha.) And, it’s semi healthy!

Here is the recipe he created (and can easily be adapted for a paleo diet) :
1 lb ground beef
1/2 onion soup mix packet
1/2 package broccoli/cabbage shred mix (you can find in the bagged salad section in your grocery store)
1/2 c shredded cheese
salt and pepper
1/3 c ketchup
1/3 c mayonnaise
Mix ingredients together and bake in oven at 350 for about 40 minutes or until cooked. We cover ours with a layer of tin foil and then pull it off about 10 minutes before it’s done to get a little more brown on top.
The sauce isn’t necessary, but it adds a little zing with the tomato/mayo flavor-just heat in microwave for a few minutes to warm it up and drizzle over the meat when it’s done and has cooled for a few minutes.
Serve with a nice green salad and a baked potato.
