Today is simple; maybe not the most beautiful photo, but definitely my favorite salad recipe and I’m sharing it with you. 🙂
Kathleen’s Asian Inspired Salad
salad greens for 2 (since I eat enough for 2 whenever I make salad!)
about 10 grapes or a handful of dried cranberries
1/2 a package of crunched up Top Ramen
some shredded cabbage (I use a cole slaw mix so I don’t have to cut it up and it usually has some carrot in it)
other veggies if you’d like such as carrot, celery, cucumber
Mix together salad ingredients and set aside.
Dressing:
4 tb soy sauce
4 tb olive oil
1 tb sesame oil
4 tb rice vinegar
1/2 ts ground ginger (grated fresh is better though-but only a tiny bit)
2 ts hot chili garlic sauce (found in the Asian section in your grocery store)
1 heaping tb of peanut butter
Mix together ingredients and you will have to soften the peanut butter in the microwave enough to mix together. Probably about 20 seconds at a time and stir to smooth consistency.
Pour on the salad and enjoy!
That is my type of dressing. Quick and delicious!!!
