Day 174 – what kind of cheese?

So, don’t shoot me, all you dairy lovers, but here is a non-dairy “cheese” that works as a good alternative if you need to cut back a little on the dairy.
Cashew Cheese! Yes, it’s made from nuts, but something miraculous happens when you soak the cashews and pulverize in your food processor, turning the mixture into a cheese-like texture and flavor. It may not taste exactly like cheese, but it sure works well in recipes to dupe the unsuspecting consumer into thinking it’s cheese.
Ok, not exactly. 🙂

But still. Cashews are a great source of protein and good fats which we all need. They also have some important vitamins and minerals including Vitamin B5, B6 and selenium and zinc. They are filling and versatile in both dessert recipes and meal recipes. I love ’em raw as a snack and now, as cashew cheese which I use as a dip for crackers or veggies.
