Oh boy, here we go again. I had white sugar today. However, plain white sugar is better in my mind than the frankencrap, high fructose corn syrup. And for this recipe, there really isn’t another sugar substitute you could use to get the same effect and flavor. I know it’s still only mid-spring, but with the bumper crop of strawberries that my grocer had in stock, I had to do another project using these babies.
Homemade Strawberry Syrup
1 c sugar
1 c water
2 c strawberries, hulled and quartered
Mix all together in a pan, heating to a boil over medium high heat. Boil for about 10 minutes or until it is visibly thickened. Cool slightly and then strain through a fine strainer. Lots of uses for the cooked strawberries too; over ice cream, oatmeal, etc etc.
