Today we’re going to get our “healthy” on. Check out the Green Rice I made! Looks beautiful, eh? This is my own creation, based on some coconut rice dishes that I’ve had before and some of my own ingredients mixed in. Next time I will try it with brown rice, but it was so much prettier with white. The crisp color contrast of green on white made the rice look so fluffy and delish!
1/2 c finely chopped kale leaves (about 3 large stalks)
1/4 c finely chopped green onion
1/4 c finely chopped cilantro (more or less to your taste)
4 cups of cooked rice
1/2 c coconut milk
1 c shredded coconut
salt and pepper
Mix all ingredients in a bowl. Can be served cold or hot. It’s good either way and a great way to camouflage the kale, both visually and in the exotic taste.
