There are very few times I can say I have carefully licked the blades of my food processor; today was one of those days. Oh my gosh! If you are unfamiliar with “broccomole”, the name should give it away. It’s a guacamole type dip but made with broccoli instead of avocado. Avocados are awesome and healthy for you, but if you are trying to get more veggies in your diet, try this! I guarantee there isn’t a husband (with tastebuds) who will turn up their nose at this dip once they taste it; the green onions and cream cheese will appeal to the most picky palette.
Broccomole
3 to 4 cups chopped, cooked til very soft broccoli
1 chopped jalapeno (remove seeds and ribs if you don’t want it too hot)
3 chopped green onions
2-3 tb olive oil
4 to 5 oz cream cheese (depending on the thickness you desire)
1/2 ts chili powder
salt
pepper
4 tb chopped cilantro
Put it all in a food processor and process until smooth. That’s it. 🙂
Could be good as a sandwich spread, a chip or veggie dip or heck, maybe even a dollop on top of your soup?
