gallery Day 8 – not kale chips!

Don’t be scared, please!  I think you’ll like these-especially those who made New Year’s resolutions and are having a hard time finding healthy snacks.
Has anyone tried this yet?? Spinach chips! Yup-you bake them just like you would kale. I tossed mine (about 6 cups) in olive oil, salt and pepper and threw them in the oven for about 20 min at 325. Watch them to make sure they don’t burn and be prepared, if you’ve cooked with spinach a lot, you know it really shrinks up! However, these delicate and delicious sheets of nutritional excellence are, just that, nutritional powerhouses. Just 1 cup can help curb overeating, prevent constipation, stave off osteoporosis and maintain lower blood pressure. Go ahead, it tastes as good as it looks! I’ve almost finished my entire batch in the time it took to write this post. 🙂
